Black Glutinous Rice Dessert
This dessert is called “Bubur pulut hitam” in Indonesia. It’s a simple dessert made with glutinous rice, palm sugar and coconut milk.
Ingredients:
- 2/3 cup of Thai black glutinous rice
- 1/3 cup of Thai white glutinous Rice
- 5 cups of water
- palm sugar or dark brown sugar to taste
- 1 stalk of pandan leaves
- coconut milk
Rinse and soak the rice overnight, you can combine the black and white glutinous rice into one bowl and soak.
Add the rice, water, sugar and pandan leaves to a saucepan. Boil on low heat for 45 minutes. Stir frequently.
Let it cool down and store it in the fridge overnight. It tastes better the next day.
To serve, scoop a few spoonful of the rice porridge, add some hot water and coconut milk into a bowl and microwave it for a minute.
Sprinkle some salt and mix it well and serve immediately.
