Stuffed bell peppers (turkish style)

Ingredients:

  • 8 mini bell peppers
  • 0.5 lbs of ground beef
  • 1/2 cup raw basmati rice
  • 1 onion, diced
  • 3 tbsp mild pepper paste
  • 2 tsp each of cumin, coriander
  • salt & pepper to taste
  • 6 medium sized tomatoes or a pint of cherry tomatoes
  • 1 cup of grated parmesan cheese
  • parsley for garnishing

Steps:

  1. Cook basmati rice in a rice cooker, let it cool down
  2. Coat bell peppers with oil, air fry for 15 mins or roast 25 mins in the oven, let cool
  3. Stir fry diced onions, add ground beef, cumin, coriander, salt and pepper. Cook for about 8 minutes or until done.
  4. Add ground beef mixture to cooked basmati rice, add parmesan cheese, mild pepper paste and mix it well
  5. Stuff rice mixture into the bell peppers, arrange it on a oven safe dish
  6. Dice tomatoes, mix with olive oil, salt and pepper. Pour tomatoes on top of the stuffed peppers
  7. Bake in oven for 50 minutes or until tomatoes looks nicely roasted. Garnish with chopped parsley
