Turkey Enchilada Casserole

Ingredients:
- 0.5 lb ground turkey
- 1 cup of frozen corn
- 1 can black beans, drained
- 2 tablespoon of taco seasoning powder
- 1/2 onion, diced
- 1 pint cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1 avocado, diced
- 1 lime, juiced
- 8 corn tortilla
- 1 can of red enchilada sauce
- 1 can of roasted green chili (trader joe’s)
- 1 cup shredded melty kind of cheese
Steps:
- Heat some oil in a non stick pan, add onions, stir fry for 1 minute, add ground turkey, stir fry for 5 minutes or until cooked
- Add taco seasoning, roasted green chili, corn and black beans into pan, salt and pepper, mix well for about 2 minutes
- Preheat oven to 350F
- In an oven safe casserole dish, pour 1/3 of the enchilada sauce to coat the bottom of the dish. Layer with 2.5 of the corn tortilla
- Pour 1/2 of the turkey mixture onto the tortilla and spread it evenly
- Add a layer of cheese
- Repeat the layers until you finish all the ingredients.
- Top with enchilada sauce and cheese
- Bake at 350F for about 50 minutes or so
- Next make the relish by mixing up the halved cherry tomatoes, sliced red onions, avocado cubes and lime juice. Season with salt and pepper
